Direct ordering is more useful when it shares the same restaurant truth as the website and menu. Sold-out items, hours and menu changes should not require a separate maintenance workflow for every guest surface.

Payments connected is not the same as ordering live
Kitch keeps payment setup, payment readiness and ordering enabled as different states. That matters because a Stripe account existing does not mean the restaurant is ready to take money yet.
The product should only say direct ordering is live after payments are ready, fulfilment is configured, ordering is enabled and the flow has been verified.
